Fresh home made pasta...

 You know once in a while you have to make your own home made pasta and in my opinion i think its better when its fresh its really easy i will guid you through it, fresh pasta brings your dish to life believe it or not and its life changing you will never want to have shop bought pasta after this trust me.

Pasta dough :

For the the pasta dough you will need to use Semolina flour it gives the pasta a rough texture and is basically the the best so the ingredients are :


  • Semolina flour 3 cups
  • 3 eggs
  • Salt and pepper
Method :

On a flat clean surface make a hole in the flour and put your eggs add the salt and pepper mix until stiff and leave it covered for 30 minutes or overnight if you not it a rush its best when its overnight, use a pastry machine to flatten it out if you own one or simply use a rolling pin until its thin and then cut it into small strips with a knife so it looks like the picture above or use the pasta machine if you have one, you can pop it in the pot after or you can dry it for next time you want to use.

Ingredients for mince :

  • Lean beef mince
  • 2 onions chopped
  • 1 green pepper
  • 3 garlic cloves and ginger chopped
  • 1 tsp chopped fresh thyme 
  • 1 tsp chopped fresh rosemary
  • 400g tin tomatoes\or 6 fresh chopped tomatoes 
  • 3 tbsp Worcestershire sauce
  • Beef stock
  • Sweet chillie
  • 1 tbsp tomatoes paste 
  • 3 tbsp soy sauce not the one with salt it will over power everything
  • Cayenne pepper
  • 3 tbsp olive oil
  • Mix brown onion soup, minestrone, tomato soup 
  • Spice for mince 
  • Beef spice
  • Dry herbs
Method :

In a pot sauté the  the onion, green pepper, garlic and ginger add the mince, salt and pepper and brown it add beef stock a cup of water, add the thyme and rosemary cover and bring to the boil for 10 minutes, add spices and cayenne pepper, Worcestershire sauce and soy sauce add tomatoes an tomato paste add the dry herbs, let it cook for 15 minutes then add the soups let it cook on low heat for 10 minutes then add sweet chillie and mix with the pasta garnish with parsley and serve.

Hhahahaha before i head out i just want to share this, lol its funny how the first thing i decide to blog about is avocados, crazy isn't it? Anyways i had this meal at Monte Casino in Fourways like i already said i'm crazy about avocados hey, okay so this was exceptionally nice, but i always try to outdo dishes i try at restaurants its just me lol....Here is a recipe below with my twist

So you can try make this at home for lunch or dinner it really works both ways.

Ingredients :


  • Chicken strips
  • 1 Avocado
  • Pumpkin cubed and already prepared
  • Feta cheese
  • Baby tomatoes
  • Baby marrows
  • Coriander
  • Salt and pepper to taste
  • Cayenne pepper
  • 1 lemon
  • Chicken spices
  • Sweet chillie
Method :

In a bowl put the chicken strips, salt and pepper alongside with cayenne pepper, chicken spices then squeeze in half the lemon in your marinade and then add the sweet chillie mix everything then leave to marinade for 20 minutes (or overnight), the chicken should stay on the grill for 8 minutes 4 minutes on each side or until you see its perfectly done(grill sliced baby marrows for 2 minutes), do not over grill as the chicken will loose its juices and become dry, half the cherry tomatoes, in a serving dish put the chicken and the halved tomatoes, pumpkin , feta cheese, and the grilled baby marrows finish with the coriander and toss in your avocado cut it as desired garnish with fresh chopped parsley , squeeze 2 tablespoons of the lemon then serve...


You can also pair this dish with a white glass of wine, hope you guys will enjoy this will post more recipes soon...happy reading....

I had it all figured out...

Its really funny how i had it all figured out about this blog lol, but i guess everything happens one step at a time with every little adventure that takes place, this picture has nothing to do with what what i started talking about but it has everything to do with sunsets and views because i love those hahahaha, lol thats besides the point i hope this blog will grow bigger each time and i hope i will not be held back to share everything with you guys because the sky is the limit this is where the picture comes in lol happy blogging....

Avocados....

Avocados are the best thing that ever graced this earth, i actually don't care what any one says but they are just simply the best, you will be surprised to learn during my blogging sessions about food theres mostly avo, according to me i can make it work with everything hahaha, this is probably my last post for today hahah or maybe not will post a recipe soon...happy reading!
