Fresh home made pasta...

 You know once in a while you have to make your own home made pasta and in my opinion i think its better when its fresh its really easy i will guid you through it, fresh pasta brings your dish to life believe it or not and its life changing you will never want to have shop bought pasta after this trust me.

Pasta dough :

For the the pasta dough you will need to use Semolina flour it gives the pasta a rough texture and is basically the the best so the ingredients are :


  • Semolina flour 3 cups
  • 3 eggs
  • Salt and pepper
Method :

On a flat clean surface make a hole in the flour and put your eggs add the salt and pepper mix until stiff and leave it covered for 30 minutes or overnight if you not it a rush its best when its overnight, use a pastry machine to flatten it out if you own one or simply use a rolling pin until its thin and then cut it into small strips with a knife so it looks like the picture above or use the pasta machine if you have one, you can pop it in the pot after or you can dry it for next time you want to use.

Ingredients for mince :

  • Lean beef mince
  • 2 onions chopped
  • 1 green pepper
  • 3 garlic cloves and ginger chopped
  • 1 tsp chopped fresh thyme 
  • 1 tsp chopped fresh rosemary
  • 400g tin tomatoes\or 6 fresh chopped tomatoes 
  • 3 tbsp Worcestershire sauce
  • Beef stock
  • Sweet chillie
  • 1 tbsp tomatoes paste 
  • 3 tbsp soy sauce not the one with salt it will over power everything
  • Cayenne pepper
  • 3 tbsp olive oil
  • Mix brown onion soup, minestrone, tomato soup 
  • Spice for mince 
  • Beef spice
  • Dry herbs
Method :

In a pot sauté the  the onion, green pepper, garlic and ginger add the mince, salt and pepper and brown it add beef stock a cup of water, add the thyme and rosemary cover and bring to the boil for 10 minutes, add spices and cayenne pepper, Worcestershire sauce and soy sauce add tomatoes an tomato paste add the dry herbs, let it cook for 15 minutes then add the soups let it cook on low heat for 10 minutes then add sweet chillie and mix with the pasta garnish with parsley and serve.
